Today, I am sharing with you a list of low-carb snacks that I hope are as much of a help to you as they are to us.
One of the hardest things to manage on a special diet is healthy snacks.
When I was growing up, I would grab for But now that my family has gone gluten-free and is moving more and more grain-free, I've needed more ideas to keep around for me, my husband, and our seemingly-always-hungry boys.
It's hard to find things that taste good and aren't loaded with processed flours, sugars, and preservatives. And when you have a craving or are sincerely hungry between meals, it's important to have healthy options around so you aren't tempted to eat what you aren't supposed to.
Just to be clear, I do not think that carbs are a problem. In fact, I am careful to get healthy carbs in my family's diet daily. Healthy carbs are important for many bodily processes and I have read that they are necessary for your thyroid and adrenals to work properly.
In fact, going too low carb can be detrimental in several ways, including affecting those with thyroid disease and adrenal fatigue. Later I hope to share some of our favorite carbs that we are using now.
Since my oldest has a life-threatening food allergy to dairy and eggs, and I am not tolerating eggs well at present, the following are not just low carb snacks, but egg and dairy-free as well. Not all of them are vegan snacks, since a few have animal products (meat or gelatin) in them, but many are.
But for now, here is a great list of low carb snacks to help you stick to your special diet, and stay away from excess carbs.

Carrot Sticks, or Baby Carrots
Olives – Another big favorite in our home.
Canned Tuna – Great with a little olive oil, pepper, and salt, but even straight, it tastes great.
Seaweed – We could eat this all day – it's our new favorite snack. I get whole sheets, but these snack packs are yummy.
This would be good with any raw veggies.

I am always on the hunt for good recipes – and the following book is a great resource for healthy snacks. Not all of them are low carb, but for most of them that aren't, you can easily make substitutions since all of the recipes are grain-free. Everything we've made from this book has been a big hit!
