I’m always on the hunt for easy healthy snacks for my family. My boys eat a LOT and are always looking for something to munch on. Some of our favorites are Crispy Green Bean Chips, Kale Chips, No-Bake Protein Bars, and No-Bake Almond Joy Bars, but I’m telling you, these Snickerdoodle Cookie Dough Balls are a HUGE hit.
Let me tell you how I know I have a winner recipe……
Sometimes, when I make healthy treats, at least one person in the family thinks they aren’t a “treat.”
In other words, this person, who shall remain unidentified, won’t eat them.
What puzzles me is that if another mom makes a similar thing, he’ll gobble it down.
Or if there’s a similarly “wholesome, not that incredibly tasty snack” in a wrapper from a health food store, he’ll gobble that down too, but since it’s from our kitchen and doesn’t have a wrapper, he’ll say it’s not that great.
He’s clearly the most finicky one in the family when it comes to food.
HOWEVER..

Ingredients
- almond butter
- cinnamon
- coconut flour
- coconut milk (or alternative dairy-free milk)
- low carb sweetener
- vanilla liquid stevia
- vanilla extract
- salt
Directions
- Combine dry ingredients for dough. Add wet ingredients.
- Form into balls.
- Combine ingredients for topping.
- Roll balls in topping.

These Snickerdoodle Cookie Dough Bites are easily adaptable for allergies. If you can’t have almond butter, sub in another nut or seed butter. Can’t have nuts or seeds due to allergies or being on the AIP diet (Autoimmune Protocol or Autoimmune Paleo)? Try coconut butter!
These snickerdoodle cookie dough bites are also grain free, egg free, dairy free, and low carb. So many of the cookie dough bites on the internet have oatmeal in them–not these. They’re totally free of grain.
Easy to Make
These snickerdoodle cookie dough bites take only 5 minutes to make.
AND they use only 6 ingredients (if you use only one of the sweeteners and don’t count the salt.)
I love having an easy recipe like this that I can whip up in a flash to satisfy the two boys.who.never.get.enough.food. Seriously. I joke with them all the time that they are bottomless pits and that I have no idea how to keep the kitchen stocked so they are satisfied.
They’re COOKIE DOUGH!
Seriously. If you’re like me, you just LOVED sneaking raw cookie dough whenever you made cookies when you were a kid. Um….we’re not going to mention all the adulthood cookie dough sneaking that went on, now are we?
Well, now, just like with this Edible Chocolate Chips Cookie Dough recipe, now you can have your cookie dough and EAT IT ALL to your heart’s content.
My whole family loves my Pumpkin Snickerdoodles (I do too), but this way you can have the same great taste without needing to turn your oven on. And since I don’t have an oven right now (Yikes! Thanksgiving is right around the corner!!), this recipe is particularly helpful.
Seriously, these Snickerdoodle Cookie Dough Balls are great.
I just made another batch while adding this recipe to the blog and my boys dove into them. My oldest said, “YUM!” when he found out that I was making them.
Between the 3 of us who are home right now, they’re almost gone.
I’ll make a bigger batch next time :).

I’ve got my eye on recipes like these chocolate chip cookie dough balls, but I’m needing to nail down a low-carb, grain-free version that meets my high standards…..back to the test kitchen!
Recipe Notes and Special Diet Substitutions
- Additional Coconut Flour: If needed, add more coconut flour, 1/2 tablespoon at a time, to make the dough workable to roll into balls.
- Low Carb / Keto: For those of you on a restricted low-carb diet, you might wish to use organic erythritol rather than xylitol as it has fewer net carbs. You might find that you need to add about 1/3 more erythritol or increase the stevia extract to taste.
- AIP: Use organic coconut sugar instead of xylitol and stevia. You could also try honey or maple syrup, but I haven’t tried these options. Also add a splash of vanilla since you are subbing for vanilla liquid stevia. Sub in coconut butter for the almond butter. You can make your own coconut butter by following these instructions.
- Homemade Coconut Milk: If you would like to make your own coconut milk, here is my Easiest Coconut Milk. You could also use another dairy-free milk.
- THM: For those on the Trim Healthy Mama plan, this recipe will qualify as an “S.”
- Sweetener Alternatives: If you’d like to use another sweetener instead of the low-carb sweetener and liquid stevia, use the equivalent of 5 tablespoons of sugar.
Snickerdoodle Cookie Dough Bites – gluten-free, vegan, keto
Ingredients
- 1/2 cup almond butter (use coconut butter for AIP – see above notes)
- 1 teaspoon cinnamon
- 3 tablespoons coconut flour
- 3 tablespoons coconut milk (or alternative dairy-free milk)
- 3 tablespoons low carb sweetener
- 15 drops vanilla liquid stevia (see Homemade Liquid Stevia; see Recipe Notes for substitutes; if desired, sub 2 tablespoons low carb sweetener instead)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt (optional but really adds a lot!)
Topping
- 3 tablespoons low carb sweetener
- 1 1/2 teaspoons cinnamon
Instructions
- Put all ingredients, except the topping ingredients, into a bowl.
- Mix well until combined thoroughly.
- Roll into balls and roll to coat in the topping.
- Store in refrigerator.

These were absolutely amazing! They also taste good with some protein for a yummy quick post workout snack but you have to add a little extra almond milk, Stevia and cinnamon to taste thanks so much for sharing! Can’t wait to try out some of your other recipes! ?

Hi, I don’t use liquid stevia since it makes everything tastes bitter and a bit weird. How can I substitute it if I use honey or maple syrup?

I’ve calculated each ball to contain around 4.5 grams of carb (this seems to vary based on the xylitol brand and almond butter).
I used the following based on this recipe’s measurements:
– Meridien smooth almond butter (Carb: 6.8 grams)
– Pipkin Organic coconut flour (Carb: 11.9)
– Xylitol uk – Birch (Carb: 25.5) (I’ve noticed some xylitol are 0 carbs)
– Coconut milk (Carb: 1.26)
– Total carbs: 45.46 or 4.55 per ball
I’ve listed this to give everyone an idea of a ROUGH estimation of the carb count 😉

I’ve made a huge miscalculation on the carb count estimation for each ball…sincere apologies!
I’ve just discovered that 100g of Xylitol contains 100g of carbs of which all are Polyols.
This means that the TOTAL CARB OF EACH DELICIOUS BALL is just under 2 GRAMS!!!…truly low-carb!!
Adrienne, I’m so sorry for the mistake…it took me this long to figure out why some xylitol brands listed 0 as the carb count and others a certain value (polyols).

These are decadent.
I was hesitant to make these at first due to my countless failures with recipes containing coconut flour. However, I had all the ingredients, and the preparation appeared way too simple. And it was.
Wow. I was hit with the perfect texture, flavor, and sweetness when I bit into one of these. I just started my low carb journey (on top of being vegan) so needless to say, it is near impossible to find an appealing LOW CARB recipe that doesn’t require special equipment or contain dairy/loads of sugar.
I’ve been looking for a simple recipe like this for over a year and this is the real deal. Will definitely be keeping these stocked between me and my roomies.

Awesome!!! Had to try this AM. My tweaks were adding 1tsp ground ginger and using powdered Stevia for sweetener. Rolled some in chopped pecans for ‘crunch’. Seriously easy to make and SERIOUSLY TASTY! Would love to post the picture for you but don’t know how? Thank you! 🙂

What is the net carb count on these?
Sorry but I don’t post nutritional information due to the many substitutions that I give. I am considering it for the future. It’s very low if you use the low carb sweeteners, however, and there are many calculators on the internet that one could use.
so you are just using buzz words like “low Carb” when in actuality you have no idea. you wont give the nutritional info…which makes me think you have absolutely no idea.
So “callingOut the Fakes” — this is a very interesting accusation considering that you are using this name and a very odd email address. Every ingredient in this recipe is low carb, so yes I do have an idea that adding them altogether would make a low carb result. I am working on getting nutritional info in all of my recipes. In the meantime, feel free to input the ingredients in a calculator yourself.
Hi! I followed the recipe, but my ingredients seemed very wet. It was difficult to roll them in my hands and in the coating. They tasted good. I’m new to this style of making sweet treats. What would cause so much wetness?

Oh my, don’t be sorry! Something went wrong in my measurements, I think. Yes I used the coconut flour. I used everything exactly, except I used baking Stevia instead of xylitol.
That should work……maybe try a small batch next time to see? I wonder if it’s the baking stevia. You could add a little extra coconut flour. It won’t have as strong of a flavor but it will help the wetness.
I too had the same issue Lori. I think it’s because there is quite a bit of oil in the almond butter. I added extra coconut flour and they rolled up nicely.
Good point – might depend on the almond butter – on the way it’s been stirred. I know when I make my Homemade Almond Butter that sometimes my butter is more liquid than others.

Do you think it will still work if I don’t use the vanilla extract, when also substituting the vanilla stevia for xylitol? I cant find vanilla extract without sugar and the only liquid stevia I can find is £7! I have all the other ingredients 🙂 thank you x

I love all the balls on the AIP/Paleo angel website but extremely expensive hoping to find a lemon cream copycat version and came across yours, it looks so good!

Interesting because when I make homemade almond butter, it’s not nearly as oily or liquidy as the jarred natural stuff…not sure if it’s because I use roasted almonds and nothing else…in any case, as long as I use nutmilk for these, they’ve been fine…one time I used heavy cream and wow did I have a hard time rolling them…they kept crumbling and I really had to squish the balls together….My hands also looked like the exxon valdez oil slick after 🙂 Did you say you were coming out with an updated version of the snickerdoodle balls or was it the coconut chips you were updating?
My almond butter consistency varies. Depends on the almonds and/or how long I’ve dried them. Update will be on the coconut chips. I have a great recipe—not sure if I want to change it a bit but perhaps I’ll post as is…..thanks for the reminder!

I have to say, I tried this recipe for the first time last week and have now remade them three times to have a “supply” both at home and for my boyfriends house.
