I’m always on the hunt for easy healthy snacks for my family. My boys eat a LOT and are always looking for something to munch on. Some of our favorites are Crispy Green Bean Chips, Kale Chips, No-Bake Protein Bars, and No-Bake Almond Joy Bars, but I’m telling you, these Snickerdoodle Cookie Dough Balls are a HUGE hit.
Let me tell you how I know I have a winner recipe……
Sometimes, when I make healthy treats, at least one person in the family thinks they aren’t a “treat.”
In other words, this person, who shall remain unidentified, won’t eat them.
What puzzles me is that if another mom makes a similar thing, he’ll gobble it down.
Or if there’s a similarly “wholesome, not that incredibly tasty snack” in a wrapper from a health food store, he’ll gobble that down too, but since it’s from our kitchen and doesn’t have a wrapper, he’ll say it’s not that great.
He’s clearly the most finicky one in the family when it comes to food.
HOWEVER..

Ingredients
- almond butter
- cinnamon
- coconut flour
- coconut milk (or alternative dairy-free milk)
- low carb sweetener
- vanilla liquid stevia
- vanilla extract
- salt
Directions
- Combine dry ingredients for dough. Add wet ingredients.
- Form into balls.
- Combine ingredients for topping.
- Roll balls in topping.

These Snickerdoodle Cookie Dough Bites are easily adaptable for allergies. If you can’t have almond butter, sub in another nut or seed butter. Can’t have nuts or seeds due to allergies or being on the AIP diet (Autoimmune Protocol or Autoimmune Paleo)? Try coconut butter!
These snickerdoodle cookie dough bites are also grain free, egg free, dairy free, and low carb. So many of the cookie dough bites on the internet have oatmeal in them–not these. They’re totally free of grain.
Easy to Make
These snickerdoodle cookie dough bites take only 5 minutes to make.
AND they use only 6 ingredients (if you use only one of the sweeteners and don’t count the salt.)
I love having an easy recipe like this that I can whip up in a flash to satisfy the two boys.who.never.get.enough.food. Seriously. I joke with them all the time that they are bottomless pits and that I have no idea how to keep the kitchen stocked so they are satisfied.

Seriously. If you’re like me, you just LOVED sneaking raw cookie dough whenever you made cookies when you were a kid. Um….we’re not going to mention all the adulthood cookie dough sneaking that went on, now are we?
Well, now, just like with this Edible Chocolate Chips Cookie Dough recipe, now you can have your cookie dough and EAT IT ALL to your heart’s content.
My whole family loves my Pumpkin Snickerdoodles (I do too), but this way you can have the same great taste without needing to turn your oven on. And since I don’t have an oven right now (Yikes! Thanksgiving is right around the corner!!), this recipe is particularly helpful.
Seriously, these Snickerdoodle Cookie Dough Balls are great.
I just made another batch while adding this recipe to the blog and my boys dove into them. My oldest said, “YUM!” when he found out that I was making them.
Between the 3 of us who are home right now, they’re almost gone.
I’ll make a bigger batch next time :).

I’ve got my eye on recipes like these chocolate chip cookie dough balls, but I’m needing to nail down a low-carb, grain-free version that meets my high standards…..back to the test kitchen!
Recipe Notes and Special Diet Substitutions
- Additional Coconut Flour: If needed, add more coconut flour, 1/2 tablespoon at a time, to make the dough workable to roll into balls.
- Low Carb / Keto: For those of you on a restricted low-carb diet, you might wish to use organic erythritol rather than xylitol as it has fewer net carbs. You might find that you need to add about 1/3 more erythritol or increase the stevia extract to taste.
- AIP: Use organic coconut sugar instead of xylitol and stevia. You could also try honey or maple syrup, but I haven’t tried these options. Also add a splash of vanilla since you are subbing for vanilla liquid stevia. Sub in coconut butter for the almond butter. You can make your own coconut butter by following these instructions.
- Homemade Coconut Milk: If you would like to make your own coconut milk, here is my Easiest Coconut Milk. You could also use another dairy-free milk.
- THM: For those on the Trim Healthy Mama plan, this recipe will qualify as an “S.”
- Sweetener Alternatives: If you’d like to use another sweetener instead of the low-carb sweetener and liquid stevia, use the equivalent of 5 tablespoons of sugar.
Snickerdoodle Cookie Dough Bites – gluten-free, vegan, keto
Ingredients
- 1/2 cup almond butter (use coconut butter for AIP – see above notes)
- 1 teaspoon cinnamon
- 3 tablespoons coconut flour
- 3 tablespoons coconut milk (or alternative dairy-free milk)
- 3 tablespoons low carb sweetener
- 15 drops vanilla liquid stevia (see Homemade Liquid Stevia; see Recipe Notes for substitutes; if desired, sub 2 tablespoons low carb sweetener instead)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt (optional but really adds a lot!)
Topping
- 3 tablespoons low carb sweetener
- 1 1/2 teaspoons cinnamon
Instructions
- Put all ingredients, except the topping ingredients, into a bowl.
- Mix well until combined thoroughly.
- Roll into balls and roll to coat in the topping.
- Store in refrigerator.

Is there an alternate ingredients to the coconut products, coconut flour and coconut milk? I am dying to make these but I really do not like the taste of coconut. Please let me know and thank you in advance!
Hi there! I don’t think that they taste like coconut but you could use any dairy-free milk (or regular milk if you can tolerate it). Coconut flour absorbs a lot of liquid so if you want to substitute that out you would have to just add in more nut butter or possibly reduce the coconut flour. But I don’t think you will taste it. I hope not at least–we don’t notice it but we like coconut!

This looks amazing! I have reactive hypoglycemia, I am looking for some of your recipes that I can freeze…would this be one of them? I need a low-carb, nutrient dense little snack that will bring me back to normal. I can’t have any high sugar snack to raise my glucose level because then my insulin will over-react and create the same issue all over again. I would love some suggestions for freezable bars or ball-shaped snacks. I want to make a bunch and freeze them and defrost a few every week.

This recipe looks amazing! One question…..could I substitute coconut sugar or honey for the liquid sweeteners in the ball part of the recipe? If so, do you possibly know how much to substitute?

Thanks! Yes, you could but liquid stevia is really really strong so you will have to adjust things to make up for that. I think honey will be easier to use. I’m reading 1/3 tsp liquid stevia for 1/4 cup honey. Hope that helps!

Can you use another flour instead of coconut flour? Like oat or some other gf?

I just added up everything that you put up there, using specifically the links you have provided and used the lowest carb count if there were multiple options give.
On the lowest end of this, it is 100.375 carbs for the recipe, since you have 10 servings for this recipe it means it is 10.0375 carbs for each ball. That is kind of a lot for a low-carb recipe.
All the ingredients above might be low carb but if you look at the nutritional facts on the back of the boxes you will notice that it has the serving size is a tablespoon on a lot of the stuff and since you end up using a lot of it during the process it ends up being misleading.
Overall though I think its a good recipe but due to the information above it kind of seems you were either misleading people (not my first guess) or you just didn’t understand the labels fully (the probable choice). Please note people take this serious cause majority of the people looking for this are diabetic or looking for someone they care about who is diabetic and they won’t like feeling mislead during the process.
Hello there–first of all, so sorry for the delay in responding. Your comment was pretty detailed and we have been having lot of things going on personally and professionally and then your comment got lost under a pile :).
Here’s the situation re: the calculator. I believe we redid this and had to change some things like removing the carbs from the sugar alcohols. Also these are estimates.
Please take a look and let me know if it’s better now. I am asking my son to review it as well.
We have found that the calculations are often “off” and it’s extremely frustrating to us. Even the paid programs seem to have a problem sometimes.
I am not trying to mislead anyone–the ingredients are not high in carbs so this shouldn’t be an issue but if you are concerned please talk w/ your physician.

If you don’t know the carb count how can you claim they are low carb?

Just made these with my son. Delicious! Used Erythritol instead of Xylitol (cause I have dogs and don’t like to keep that in the house…they’ll snatch up anything that falls on the floor before you can stop them!), so used a little less than 1/3 more when measuring.

Could you use almond flour vs the coconut?
They aren’t interchangeable b/c coconut flour soaks up a lot more liquid.
