Gluten-Free Christmas Cookies - low-carb options
What's better than Christmas Cookies? Healthy Christmas cookies, that's what - and in our house, that means gluten-free Christmas Cookies. In fact, most of the cookies in this post are grain free Christmas Cookies so if you're off of grains, or limiting them, you are in luck.
And since we're watching carbs, I'm giving low carb options for as many of the cookies as possible and AIP options where possible.
When I was little, we always made cookies at Christmastime. I really got into it, making all kinds of flavors some years. I baked traditional chocolate chippers to Almond Crescents, to Meltaways and even Biscotti. But all time favorites were Peanut Butter Blossoms.
There's something about those Peanut Butter Blossoms - the combination of Chocolate and Peanut Butter (highlighted in my Chocolate Peanut Butter Cup Chia Pudding) is always a winner, and when the cookies are still warm, those Hershey Kisses just melt into the cookie (and into your mouth) just right.
When I grew up, however, I found that gluten and I didn't get along so well, and we felt the need to take the rest of the family off of gluten for various health reasons. And then we found out that my oldest was deathly allergic to dairy and egg, and so there went many of our favorites.
Time to find new recipes.
Our dietary needs have changed a lot over the years, to the point where we've experimented with paleo, GAPS, and AIP, but right now we pretty much eat as healthy as possible while limiting carbs and having basically no junk at all.
I've gotten a few healthy cookie recipes together, which really help, but I reached out to some blogger friends of mine to expand my recipe box.
And boy did I get some good ones.
My mouth was watering as I put this post together.
And yes--it even has my favorites, Peanut Butter Blossoms, in the mix.
Whether it's Christmas or not, you can enjoy these delicious Gluten-Free Christmas Cookies all year round!

Frosted Pumpkin Cookies
For AIP, omit the non AIP spices (nutmeg is debatable) and use a gelatin egg and cassava or tiger nut flour.
Egg Nog Cookies (gluten-free, keto, paleo)
Pumpkin Snickerdoodles (gluten-free, vegan, grain-free)
We loved these cookies when they were just gluten-free,
but if you are on a grain-free / low-carb diet, I've included those options for you.

For low carb, substitute a low-carb sweetener and use low-carb chocolate chips or my Homemade Chocolate Chips.
Paleo Sugar Cookies - A Girl Worth Saving
For low carb, substitute a low-carb sweetener, and if you're really strict low carb, omit the tapioca.
Keto Snowball Cookies
Grain-Free Chocolate Crinkles
For low carb, substitute a low-carb sweetener and use almond flour instead of cassava flour.
Pumpkin Pecan Cookies
A great combination of pumpkin, spices, and pecans for a healthy treat.
No-Bake Coconut Delights
If you're in a hurry, there's almost no faster cookie to make than these no bake coconut cookies.
They're a knock off of popular raw cookies you can find in most health food stores.

Oh my goodness there are so many fun Christmas cookies in this collection. How to choose?! Those PB Blossoms remind me of the ones I used to make with my grandma. I love baking holiday cookies, so it will be fun to go through and choose some special ones to make with my littles.
