Our family loves beans.
We were actually practically vegan for a good number of years, mostly because we were on a super tight budget and handling raw meat pretty much grossed me out.
I think we've eaten just about every bean variety known to man.

Lentils are one of our favorite beans. I love the meaty taste (they make a GREAT substitute for meats if you are looking at cutting your food budget), but they also are full of good nutrition.

This looks fantastic! There was a restaurant in the last city we lived in that served the most delicious lentil soup I’ve ever had. It tasted like a beef stew without beef, and it had no curry or tomatoes in it. I have searched and searched for a similar recipe without luck. All the lentil stews/soups I can find always have either curry or tomatoes in them. Have any of you ever come across a recipe like this? Thanks!
