This strawberry avocado smoothie is creamy, dairy-free, low carb, and easy to make with avocado, strawberries, coconut milk, and sweetener.

- 1 1/4 cups coconut milk (or other dairy-free milk)
- 1/2 pound frozen strawberries
- 1/2 avocado
- 1/4 cup low-carb sweetener (or alternative--see Recipe Notes / Special Diet Notes for options)
- 1/32 teaspoon stevia extract
- dash salt (optional)
Place all ingredients in a blender.
Blend until smooth.
Adjust coconut milk and/or sweetener as desired.
Store any leftover smoothie in a glass container in the fridge for a few days or freeze in freezer cubes for future use.
- Sweeteners: Use any sweetener you like. Powdered or liquid blends best, but a high-powered blender will handle most types. I like combining two sweeteners for better flavor, but it’s optional.
- Storage: Best enjoyed fresh, but leftovers can be refrigerated (covered) for up to 24 hours.
- Consistency: Adjust the coconut milk to make the smoothie thicker or thinner.
- Strawberries: Frozen strawberries give the thickest, coldest smoothie. Fresh will work but result in a thinner texture.
- Salt: Optional, but a small pinch enhances sweetness and adds trace minerals.
