Ingredients

  • 1 1/4 cups coconut milk (or other dairy-free milk)
  • 1/2 pound frozen strawberries
  • 1/2 avocado
  • 1/4 cup low-carb sweetener (or alternative--see Recipe Notes / Special Diet Notes for options)
  • 1/32 teaspoon stevia extract
  • dash salt (optional)

Instructions

  • Place all ingredients in a blender.
  • Blend until smooth.
  • Adjust coconut milk and/or sweetener as desired.
  • Store any leftover smoothie in a glass container in the fridge for a few days or freeze in freezer cubes for future use.

Notes

  • Sweeteners: Use any sweetener you like. Powdered or liquid blends best, but a high-powered blender will handle most types. I like combining two sweeteners for better flavor, but it’s optional.
  • Storage: Best enjoyed fresh, but leftovers can be refrigerated (covered) for up to 24 hours.
  • Consistency: Adjust the coconut milk to make the smoothie thicker or thinner.
  • Strawberries: Frozen strawberries give the thickest, coldest smoothie. Fresh will work but result in a thinner texture.
  • Salt: Optional, but a small pinch enhances sweetness and adds trace minerals.
