These Zucchini Noodles with Cherry Tomatoes is the perfect low-carb/keto pasta dish that everyone will love!

- 4 large zucchini
- 1 tablespoon olive oil
- 1 onion (finely chopped)
- 4 garlic cloves (finely chopped)
- 1 ½ cups cherry tomatoes cut in half
- ½ cup crumbled feta cheese
- ½ cup fresh parsley (finely chopped)
Using a spiralizer, julienne cutter or knife, cut the zucchini into very thin strips.
Cut the cherry tomatoes in half.
Chop the onion and garlic finely.
In a large skillet, heat the olive oil over medium heat, then saute the onion for about a minute or two until somewhat cooked. Then add garlic and cook for another minute or two.
Add zucchini and tomatoes and cook until the zucchini is tender, about 5 minutes.
Sprinkle feta cheese and parsley on top. Toss to combine.
Season with salt and pepper to taste.
- This dish should be eaten the same day that it's made to prevent the zucchini from getting soggy.
