Ingredients

  • 4 large zucchini
  • 1 tablespoon olive oil
  • 1 onion (finely chopped)
  • 4 garlic cloves (finely chopped)
  • 1 ½ cups cherry tomatoes cut in half
  • ½ cup crumbled feta cheese
  • ½ cup fresh parsley (finely chopped)

Instructions

  • Using a spiralizer, julienne cutter or knife, cut the zucchini into very thin strips.
  • Cut the cherry tomatoes in half.
  • Chop the onion and garlic finely.
  • In a large skillet, heat the olive oil over medium heat, then saute the onion for about a minute or two until somewhat cooked. Then add garlic and cook for another minute or two.
  • Add zucchini and tomatoes and cook until the zucchini is tender, about 5 minutes.
  • Sprinkle feta cheese and parsley on top. Toss to combine.
  • Season with salt and pepper to taste.

Notes

  • This dish should be eaten the same day that it's made to prevent the zucchini from getting soggy.
  • Adding the cherry tomatoes later than the zucchini adds a punch of freshness to the dish.
