- 2 pounds brussels sprouts washed
- 6 tablespoons extra virgin olive oil or avocado oil
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon pepper or to taste
- 10 slices bacon cut into ½ inch pieces
Preheat oven to 425 degrees. Spray baking sheet with cooking spray and set aside.
Slice brussels sprouts in half and place in a large bowl. No need to remove ends.
Combine oil, salt, and pepper in a small bowl and stir to combine.
Drizzle combined oil and spices over the cut brussels sprouts, tossing well to coat evenly.
Lay seasoned brussels sprouts face down on a large baking sheet (so they can be in a single layer) spreading them out evenly, placing any fallen sprouts leaves in between the sprouts.
Place bacon pieces between the cut brussels sprouts, making certain they touch the baking sheet directly.
Bake for 10 minutes in preheated oven, then flip the brussels sprouts and bacon over. Bake an additional 10 minutes or until the brussels sprouts are golden, fork tender, and caramelized, and the bacon is crisp.
Serve immediately.
- Oil: It's important to choose an oil that has a high smoke point when roasting this or any other food. Extra Light Olive Oil and Avocado Oil are both good choices.
- Important Roasting Tip: Don't peek at these roasted brussels sprouts for the first 10 minutes of roasting time to get the best roasting results.
- Leaves: Either peel the small leaves off the sprouts before roasting and make Brussels Sprout Chips or if they fall of when prepping, simply place them on the baking sheet.
