Ingredients

  • 1 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey (see Recipe Notes for alternatives)
  • 2 tablespoons Dijon mustard (see Recipe Notes for alternatives)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Add all ingredients to a bowl.
  • Mix well to combine.
  • Store in a jar or other glass container in fridge.
  • Mix well before serving to ensure ingredients are evenly distributed.

Notes

Paleo: This recipe isn't paleo due to the prepared mustard. However, you could use a Homemade Mustard, or purchase this to use in the recipe.
Vegan: If you want to make this vegan-friendly (assuming you are in the "honey isn't vegan" camp), then you could use maple syrup as the sweetener.
AIP: This recipe isn't AIP--the only way to make it work for the AIP diet is to use this mustard alternative.
Keto/Low carb: To make this recipe keto/low-carb friendly, substitute in this low-carb sweetener. You might wish to powder it first or heat the dressing first so it dissolves well. It's not quite as yummy, but it works! You will want to use 1 1/2 times the amount due to honey being sweeter than sugar. See this post on substituting sweeteners for more information.
