Superfood Berry Popsicles - Low Carb with AIP options

These Superfood Berry Popsicles are Low-Carb Popsicles made with Superfoods and are loaded with antioxidants for amazing health benefits.

Ingredients

  • water
  • 2 tablespoons powdered berries (10 grams - approximately 2 tablespoons; add more if you would like more flavor) (or for AIP see Recipe Notes)
  • 1 1/2 cups berries
  • 1 tablespoon lemon juice (or the juice of one lemon; I buy huge bottles of lemon juice at Costco)
  • stevia (to taste)

Instructions

  • Blend the Berry Powder with 2 cups of water.
  • Add the juice of ½ of a lemon (1 tablespoon of lemon juice) to the blended mixture. Stir well.
  • Fill the popsicle molds half way with berries.
  • Pour the Berry Complex Mixture over the berries to fill.
  • Freeze until solid. About 5 hours for large popsicles.

Notes

  • For the AIP option for this recipe use another fruit powder because the powder that I used contains some non AIP foods.  
  • Berry Powder Alternative: You could also use juice instead of the powders and water, or 2 cups Cranberry Juice or this Homemade Cranberry Juice if you'd like.
