1/4 cup lukewarm water 1 Tbsp gelatin or agar powder 1 14-oz can canned pumpkin 1 14-oz can full-fat coconut milk 2 tsp vanilla extract 1/4 tsp salt 3/8 tsp pure stevia extract 1/8 cup additional other sweetener 1 3/8 tsp pumpkin pie spice

How to Make Healthy Pumpkin Custard
Sprinkle gelatin over water. Stir thoroughly. Let it sit until it gels.
Combine pumpkin, coconut milk, spices, and sweeteners in a pot until quite warm. Do not simmer. Remove from heat. Once the gelatin is solidified, whisk it into the pumpkin mixture.
Pour into serving containers and refrigerate until set. Serve and enjoy!
