"Beans and Rice" — and "Rice and — Fudge"?

Did you know that up until about a year ago, our family used to be almost completely vegetarian (and my son was basically a vegan due to his life-threatening allergies to dairy and eggs)?

The vegetarian lifestyle did two things for us:

1.  It helped us save a lot of money on our food bill

2.  It made me into sort of a bean gourmand :-).

Well, I am not recommending necessarily that you become a vegetarian or vegan, but if you are interested in some money saving tips and some great bean recipes, come over to Sarah’s Deals today.  I am sharing some money saving tips and some great bean recipes to help reduce your grocery bill and expand your recipe repertoire.  And I promise that they are not all rice and beans — or even beans and rice :-).

  1. As I commented on Sarah’s blog, you might not want to tell everyone that there are beans in something that doesn’t usually have beans. I brought a cake made with beans to a family pot luck. No one guessed the mystery ingredient but I think some would not have tried it had they known. It was a big hit, though, especially because I am not known for sweets.

    • You are absolutely correct! I have served bean fudge and bean brownies and no one knew! By the way, does your bean cake have a lot of eggs in it? I tried one, but it didn’t work quite well, probably because I tried it without eggs so that my son with the egg allergy could eat it. I’d love another version, or maybe I’ll just have to make two kinds of cake :-).

  2. Just a heads-up – people can be allergic to legumes, too. Please NEVER use surprise ingredients in recipes unless you know the food tolerances & allergies of everyone who might eat them. It’s fun to surprise people, but not by causing them to go into anaphylactic shock. Even if they are intolerant to food, not allergic, eating it can cause days of unpleasantness(the details of which I will spare you!).

      Yes, you are correct that people can be allergic to legumes, though of course, soy and peanuts are the most common. Of course, if you know someone has allergies who is to be eating something that you have made, then there are no surprises. And we know about the details here as well :-).

  4. Love these ideas! Fudge?! Wow. Will have to try that! I really haven’t gotten accustomed to cooking with beans yet as I always thought I didn’t care for them — but soaked, homemade beans as opposed to yucky processed, canned kind are so much different. And apparently, you can work beans into your cooking where they are not even noticeable! I have lots to learn about beans, it seems! :) Thanks for sharing this with Sunday School today!

    • I feel the same way about getting better at cooking with meat. So maybe we can share some tips and recipes! :-). I just made a bunch of the fudge last night – and my kids (and I…uh oh) couldn’t keep out of it. I need to stop eating at night :-(.

      • Nooo… eating at night is good for stabilizing your blood sugar while you sleep! Especially if you’re at all hypoglycemic, which is pretty common. I say, eat your fudge whenever you please! :D

        • Hi Emily! I was hypoglycemic, but I think it is gone now. I will check that out, but I do think I read that post. It seems, from reading Ann Marie’s posts recently, that she and I should talk. I have adrenal burnout and for sure am MG deficient. It was really interesting reading her post. I am coming out of it all, however, and am really looking forward to getting my next hair tests back to see how my progress is going. I have been feeling a whole lot better. The night eating makes it a lot harder for me to keep weight off right now. I am not fat, but I was really quite small before I hit bottom w/ my health. Maybe I’ll never be back there again, but now my clothes don’t fit like I want them to. My metabolism has slowed a ton and I need all the help I can get. :-). And if I ate the fudge whenever I pleased, I wouldn’t fit through the door :-).

  5. I have found that a lot of people are afraid to cook dried beans because they don’t know how. I have even found myself in the grocery store aisle giving a brief bean cooking seminar to complete strangers who ask me if I know how to cook them. When my kids were little we were pretty broke most of the time. My husband’s aunt started giving us a 25 lb bag of beans for Christmas every year kind of as a joke because I used to go to her house and “borrow” dinner when we were low on food. I thought it was a great gift because I always had something on hand to stretch our budget. One night we were living large and I made beef stew and set it on the table in the Grandma’s old Hall China bowl I usually served beans in. My 3 year old stood up in her chair, looked in the bowl and asked “What kind of beans are those?” I got a good laugh out of that.

      Your story sounds so similar to ours. Actually, you should see how many 25 lb bags of beans we have in our basement. I should post a photo of it for all to see :-). And my kiddo is like yours along the whole foods way – we regularly hear him say things like, “Mom, what are Pop Tarts?” :-). He has been exposed to so little junk food that he doesn’t know what most of them are. And he is 6. Take care!

  8. Thanks for sharing this! I pinned the bean fudge recipe; I’ve tried a bean brownie recipe before which went over well with my kids. I should make both of them again.

    BTW, does your bean brownie recipe use agave? Mine does, and I’d like to find one that uses a different sweetener. Thanks!
