I had a rough night of sleep last night (up at 4:30 with a slightly upset stomach) and felt wide awake. I really thought it was about 7 am since I felt wide awake. Thank God (really) that I was able to get back to sleep. It wouldn’t have been easy to make it through the day without the extra 1-2 hours that I finally got.
So that’s why I’m late getting the TT linkup up this morning. I need to get in the habit of scheduling it the day before
.
Now I am going to be in a hurry to get a few things done before the house is a-buzz with everyone up.

The Pumpkin Flaxseed Muffins with Walnuts turned out spectacularly. The whole family enjoyed them with homemade pork sausage for breakfast. I later had one with mesquite smoked turkey for lunch. Oh, my! I made a piggy of myself. So, I will be happy to post the recipe for you. I will be buying my bulk spices this next week and can’t wait to begin putting together some of the spice blends you have created. I am positive they will be a time saver. Pumpkin Muffins
Based off the pumpkin bread recipe by Annelise Roberts
Ingredients:
1 1/2 c. Brown Rice Flour Mix (1 ¾ cups brown rice flour, ¼ cup potato flour, 2/3 cup potato starch, 1/3 cup tapioca starch makes 3 cups of mix)
¼ c. flaxseed meal
¾ t. baking soda
1 t. xanthan gum
½ t. salt
2 t. baking powder
1T. cinnamon
½ t. nutmeg
½ t. ground ginger
¼ t. ground cloves
2 large eggs
2/3 c. agave nectar plus 2 t. maple syrup
¼ c. water
1/3 c. plus 2 T. melted virgin coconut oil
1 t. vanilla
2 T. molasses
1 c. pumpkin puree’
1/2 c. chopped walnuts (optional)
Directions:
1. Preheat oven to 350 degrees F. Position rack in center of oven
2. Mix flour, flaxseed meal, baking soda, xanthan gum, salt, baking powder, cinnamon, nutmeg, ginger and cloves together in large mixing bowl.
3. Combine eggs, water, agave nectar, maple syrup, oil, molasses, vanilla and pumpkin in a separate bowl. Whisk to blend.
4. Pour the wet ingredients into dry and mix until well blended. Do not over beat.
5. Pour batter evenly into pan(s) and bake about 25-35 minutes or until toothpick inserted in center comes out clean.
6. Remove muffins from pan immediately. Cool completely on rack before serving or wrapping
