Few strawberry sage popsicles on a white rectangular plate

Strawberries are the most deceptive food, particularly in North America.

They look so beautiful: lush red, juicily plump, large heart-shaped. Just looking at them, you can imagine slurping in the sweet juice as you sink your teeth into the red flesh.

Instead, if I succumb to buying them in an ordinary grocery store, they turn out to be cardboard under the illusion of strawberries.

White and dry on the inside, it’s such a disappointment.

Good quality strawberries, on the other hand, fulfill all those expectations. Their sweet scent is a sign that summer is underway, bringing with it all the associations of sunny days, fresh sweet fruit, strawberry lemonade, and….popsicles.

Popsicle Love, Sticks, and Homemade Healthy Strawberry Popsicles

I only recently found popsicle forms where I live.

One problem is, however, that it is one more thing for the toddlers to make a mess with. I recently caught a twin throwing popsicle sticks and containers off the balcony (which is attached to the kitchen). And, of course, we are already missing some sticks.

But it’s worth it. The children love sucking on those cold, refreshing, sweet treats. They get so excited when they see that some are ready, impatiently waiting until the popsicle can be pulled from the mold.

And they all loved these strawberry sage popsicles. There is only enough sage to add complexity of flavour, not overwhelm with sageness.

I’ve been on a fruit and herb mixing streak, like Watermelon Lemon Balm Sorbet and Cherry Mint Spritzer. And there is more to come.

Note: I added water to my popsicles to stretch out the strawberries; four children make quick work of popsicles.

For more intense strawberry flavour and more sweetness, skip the water or add less of it.

Purchasing Recommendations

1.  For the sage, if you are going to be using dried sage, I recommend Starwest Botanicals, or Amazon.

2.  If you don’t already have popsicle molds, I would personally recommend these popsicle molds.
