{Cookies are a wonderful thing. But they must be healthy cookies in this house. Yes, our OREO days are over.

Thankfully, Raia from Raia’s Recipes brings a recipe for almond butter cookies that are a breeze to put together.

Plus they’re grain-free, sugar-free and vegan! These almond butter cookies are perfect for almost any special diet. And if you use a low-carb sweetener, they’re just perfect for the candida diet too.}

Every Monday night, my family of six gathers around my husband’s laptop screen to watch a family-friendly movie while we stuff our faces with homemade pizza.

This tradition is almost always followed up with a request for cookies, and since family pizza night is special, I usually oblige.

Of course, seeing as it’s pretty much bedtime once the pizza’s gone, I need to make sure these cookies are as non-dessert-y as possible in order to keep the post-cookie bouncing off the walls to a minimum ;).

Thankfully, since our eating habits drastically changed after discovering my struggle with my autoimmune system, our tastebuds have slowly developed to exclude overly sweet things. The sugary treats we used to crave have been replaced with fruits and honey (though we do still love our dark chocolate!)

Simple Coconut Almond Butter Cookies – the Perfect Solution

These simple almond butter cookies are a Monday night favorite. The hint of sweetness provided by a little honey and some raisins is just enough to make them special for the kiddos, but they’re not so sweet that we won’t serve the leftovers for breakfast on Tuesday morning. 🙂

  • Preheat oven to 350.
  • In large bowl, whisk together flax and water. Let set until gelled (about 5 minutes).
  • Stir in remaining ingredients.
  • Bake for 12 minutes, or ’til golden brown.

  1. I made these last night and they were. Delicious. I’m am on the Candida diet and have been for several months. We tried one other cookie and they were not good these are great. I doubled the recipe and added fresh cut up cranberries instead of chocolate. I think I will add cinnamon next time too. The cranberries gave them a zing. I wasn’t sure how much stevia so I used a little less than a teaspoon of the liquid. Thank you for the recipe.

      1. I use flax all the time and never got a gel. . I take two heaping TBS every morning of my life for so many health benefits. I mix it with water and drink it down. It has never gelled. :/ I will try some and let it set.

  2. When I tried to make these, they were very runny and they didn’t hold together well. Any thoughts on how I could prevent this? Thanks!

    1. I’m sorry they didn’t work out for you, Anna! I make these cookies regularly and have never had that happen. :/ The only thing I can think of is that your almond butter may not be as thick as mine is. (Mine is very thick.) If you don’t have any egg allergies you could try subbing an egg for the flax meal and water, that would make it stick together more. Sorry I can’t be more helpful!

  3. I am so thrilled to have found your page. We can’t wait to try this recipe. We just discovered my son ‘s recent stomach issues to be caused by gluten intolerance and wheat allergy. As an active 12 year old he feels like he has been handed a life sentence…:-( We are searching and learning about how to eliminate and substitute new alternatives.
