Whew. The past few weeks have been a whirlwind.
Kids activities, church stuff and the election – and being sick on and off.
I have found myself worn out and needing to cut corners everywhere.
It seems a lot of us are “feeling the time crunch” as well — so I thought I’d put together a quick post with some of my favorite time-saving kitchen tips and fast recipe to help you all out.
Everyone knows that cooking the whole foods way can take a lot of time.
But over the years I have come up with some techniques that have saved time and sanity.
I still feel too frazzled a little too often, but these ideas take the edge of the “frazz” a bit.
(But if you decide to drop by my house unannounced, just know it is nowhere near pristine, OK

One of my favorite time-savers is chopping a lot of a vegetable (or grating cheese) when I got it fresh at a good price and can spare a little time, using some of it in a meal, and freezing the rest in bags of 1 or 2 cups to use in later meals. Here are some details on freezing small portions. It’s really convenient to have the freezer stocked with things that are ready to thaw for easy use–and for some recipes, you don’t even have to thaw first!
