Grain Free Cookies, Muffins, and Quick Breads–Oh MY! –GIVEAWAY–2 Winners $95 Value

I’ve NEVER recommended a prepared mix before.

This is a FIRST for me….find out why……

I’m a Whole Foodie Gal.  And we are on special diets.

Nothing but:

– whole grains
– organic when possible
– healthy fats, and
– sweeteners as healthy as possible.

We pretty much have nothing.processed.in.our.home.

I try to make EVERYTHING from scratch.

But I’m also uber busy.

I mean, I always bake in bulk and freeze the extras so I have something on hand.  But there’s a problem.

My kids.keep.eating.

Everything.

So we end up with this dilemma all.the.time.

Maybe you do too?

You know–your kid gets invited to something at the last minute to a place where there’s going to be tons of junk food.

Or you find out at 5:00 that they are going to be serving cookies at your kids’ scout meeting at 6:30.

Sigh.

If I were “Perfectly Organized Super Crunchola Mom” I would have a freezer stocked with whole foodie, allergy-friendly treats, but I don’t. I’m always trying to stay ahead of the game, but it’s not easy.

And on top of that, we’re considering going grain-free, so that really makes things tough in the snack department.

I’ve thought about buying some Packed Mixes or pre-made treats to have on hand for times like these, but:

The Problems with Packed Mixes

low quality (The #1 ingredient is typically tapioca starch, with sugar being #2 [even if it’s organic cane juice crystals, that’s not a big step over bleached white sugar in my mind, and it doesn’t do well for those of us on the candida diet.  :(.]) or

– they don’t work for special diets (they’ve got dairy, egg, candida-feeding ingredients, or gluten. You get the picture.)
If you’ve been there too, then you will totally understand why I was soooo excited when I found out about Simple Mills and their AMAZING and versatile muffin mixes.

Well, this is a FIRST for me.

Low Glycemic

This is The.First.Low.Glycemic.Muffin.Mix. Made with whole almond flour (glycemic index (GI) <1) and coconut nectar (glycemic index of 35–no cane juice crystals here!

Most GF flours have a GI of over 85 and table sugar’s GI is 65.)  Did you know that?  Seems like it would be better to eat a Snickers Bar than a baked good made with GF flour…hmmmm?

Super Clean

Get a load of this ingredient list (from the Chocolate Muffin Mix):
– almonds
– organic coconut nectar
– arrowroot powder
– unsweetened cocoa
– organic vanilla beans
– baking soda
– celtic sea salt
Nothing funky or unpronounceable here!

Super Versatile

You can make muffins (of course), but you can also make quick breads.

And cookies!  One of my blogger friends, Kelly, of The Nourishing Home, did some nice cookie recipes using Simple Mills’ mixes.

They look amazing, but I went the lazy easy peasy route and just made the cookies by plunking the muffin mix “as is” onto my trusty baking stones.

Let’s just say that I can’t.keep.my.kids.out.of.these.muffins.

Seriously. I made up 2 batches the other day and within 2 days, they were gone-zo!

And I didn’t eat THAT many–ahem :).

And here’s the real evidence of how tasty these mixes are.

My hubby.

He doesn’t like chocolate. Says it gives him a headache.

We should all have that problem, shouldn’t we?

Well, I made some of the chocolate muffin mix into cookies and sent them with him and my son to hockey practice.

The next day, here’s what transpired:

Hubby: “What were those chocolate cookies you gave us?”

Me: Chocolate Cookies made from those Muffin Mixes I’m doing a review for….why?

Hubby.  “They were sooooooo good!”

No mention of a headache. Hmmmmmm…..

I rest my case. Delicious, No Headache-Causing, Hubby-pleasing, Chocolate Muffins!
