Grain Free Cookies, Muffins, and Quick Breads–Oh MY! –GIVEAWAY–2 Winners $95 Value

Boys and Simple Mills! New Wmk

I’ve NEVER recommended a prepared mix before.

This is a FIRST for me….find out why……

I’m a Whole Foodie Gal.  And we are on special diets.

Nothing but:

– whole grains
– organic when possible
– healthy fats, and
– sweeteners as healthy as possible.

We pretty much have nothing.processed.in.our.home.

I try to make EVERYTHING from scratch.

But I’m also uber busy.

I mean, I always bake in bulk and freeze the extras so I have something on hand.  But there’s a problem.

My kids.keep.eating.

Everything.

So we end up with this dilemma all.the.time.

Maybe you do too?

You know–your kid gets invited to something at the last minute to a place where there’s going to be tons of junk food.

Or you find out at 5:00 that they are going to be serving cookies at your kids’ scout meeting at 6:30.

Sigh.

If I were “Perfectly Organized Super Crunchola Mom” I would have a freezer stocked with whole foodie, allergy-friendly treats, but I don’t. I’m always trying to stay ahead of the game, but it’s not easy.

And on top of that, we’re considering going grain-free, so that really makes things tough in the snack department.

I’ve thought about buying some Packed Mixes or pre-made treats to have on hand for times like these, but:

The Problems with Packed Mixes

low quality (The #1 ingredient is typically tapioca starch, with sugar being #2 [even if it’s organic cane juice crystals, that’s not a big step over bleached white sugar in my mind, and it doesn’t do well for those of us on the candida diet.  :(.]) or

– they don’t work for special diets (they’ve got dairy, egg, candida-feeding ingredients, or gluten. You get the picture.)
If you’ve been there too, then you will totally understand why I was soooo excited when I found out about Simple Mills and their AMAZING and versatile muffin mixes.

Well, this is a FIRST for me.

I have NEVER found a mix I felt this good about.

Seriously.

This.is.one.wholesome.product.

Enter Simple Mills

Simple Mills is different. Imagine my excitement when I heard about this company.

– Low Glycemic
– Quality Ingredients (a.k.a. no funky stuff)
– Small Business
– Grain Free
– versatile
– deeeelicious.
– Savings for you!

Low Glycemic

This is The.First.Low.Glycemic.Muffin.Mix. Made with whole almond flour (glycemic index (GI) <1) and coconut nectar (glycemic index of 35–no cane juice crystals here!

Most GF flours have a GI of over 85 and table sugar’s GI is 65.)  Did you know that?  Seems like it would be better to eat a Snickers Bar than a baked good made with GF flour…hmmmm?

Super Clean

Get a load of this ingredient list (from the Chocolate Muffin Mix):
– almonds
– organic coconut nectar
– arrowroot powder
– unsweetened cocoa
– organic vanilla beans
– baking soda
– celtic sea salt
Nothing funky or unpronounceable here!

Super Versatile

You can make muffins (of course), but you can also make quick breads.

And cookies!  One of my blogger friends, Kelly, of The Nourishing Home, did some nice cookie recipes using Simple Mills’ mixes.

They look amazing, but I went the lazy easy peasy route and just made the cookies by plunking the muffin mix “as is” onto my trusty baking stones.

Deeeelish!

Check these out.  Dontcha just want a bite?

Sorry. They’re all gone :(.

Simple Mills Chocolate Cookies

Nourishing and Sustainable

You can support a small company (like mine) when you buy Simple Mills.  It’s owned by Katlin there is only one other employee, Jenna.  LOVE it!

Deeeelicious!

How delicious?

Let’s just say that I can’t.keep.my.kids.out.of.these.muffins.

Seriously. I made up 2 batches the other day and within 2 days, they were gone-zo!

And I didn’t eat THAT many–ahem :).

And here’s the real evidence of how tasty these mixes are.

My hubby.

He doesn’t like chocolate. Says it gives him a headache.

We should all have that problem, shouldn’t we?

Well, I made some of the chocolate muffin mix into cookies and sent them with him and my son to hockey practice.

The next day, here’s what transpired:

Hubby: “What were those chocolate cookies you gave us?”

Me: Chocolate Cookies made from those Muffin Mixes I’m doing a review for….why?

Hubby.  “They were sooooooo good!”

No mention of a headache. Hmmmmmm…..

I rest my case. Delicious, No Headache-Causing, Hubby-pleasing, Chocolate Muffins!

  1. like the ingredients used in the products and the focus of making real foods available to busy workers and mothers

  2. They’re gluten free but don’t have tons of sugar in them and the mixes are made with healthy ingredients. Plus they look delicious! :)

  3. Really love the fact that they’re using alternative food sources to produce flours and other foods for those who are gluten intolerant, Celiacs, or choose to go grain free. And LOVE that they use coconut for sweetener.

  4. I really like they are low glycemic and save you time!

  5. I went gf earlier this year and it has been a huge improvement. But I also avoid a lot of baked goods right now because I am skeptical about their ingredient list. This is one I’d love to bake up and try!

  6. I am impressed that there is a grain free mix; I thought the days of any kinds of mixes were completely gone from my life.

  7. I really love that they do not use any refined sugars or carbohydrates! Thanks for the giveaway!

  8. Kim Campbell says:

Would love to try the Pumpkin! I would make muffins.

  9. Simple Mills actually offers grain-free (not just gluten free), packaged “instant” baking mixes with all natural ingredients, using zero carb almond flour.

  10. Those mixes sound great… can we get the recipes for the mixes?

  11. I love the simple ingredients. I, like you, usually bake from scratch to avoid all those questionable ingredients in most gluten free mixes.

    • Yes, it’s amazing what weird ingredients are in the products on the shelves! That’s why I started Simple Mills – I wanted mixes on the shelves to made with whole-food, natural, and nutrient rich ingredients that I would actually want put in my body!

  12. Looks great, especially for us who get a little lazy (I mean “us” who want things easy peasy) sometimes!

  13. I love how they explain the why’s behind almond flour

  14. Simple Mills has done a lot of work to try to fit into a lot of different diet plans which is wonderful for people who need to carefully watch what they eat. I would love to try these mixes.

  15. It’s impressive that they give nutritional info on the site.

  16. I LOVE that they use almond flour and coconut flour! I have to try this mix!

  17. YEAH! Just in time for the holiday’s to have on hand for unexpected company. I just ordered the sample pack. Thanks for sharing! ?

  18. Susan Alexander says:

Neat! Unfortunately I won’t be entering since we have tree nut allergies here :/

  19. These look amazing! I think I might get some for when I’ve conquered my candida but also for relatives to keep on hand when they want to make treats for my daughters, MUCH better option than what is often made for them! Thanks so much!

  20. Mmmmm. My mouth is drooling over the muffins. I would definitely make some healthy winter morning muffins with the Pumpkin mix. Thanks.

Question – Do these mixes contain any corn or potato?

    • No corn or potato here! This was actually a huge consideration when we made our recipes. We wanted everything we put in the mixes to be nutrient rich. Plus, many people who have gluten allergies (my mother included) also have allergies to corn or potato! So we made sure to cook with ingredients that would be friendly for all.

    • Oops, nevermind. I just found the answer to my own question here: http://www.simplemills.com/pages/how-were-different

And no,these do NOT contain any corn or potato! Yes!! These are my kind of products!

  21. Becca Speltz Gater says:

I really appreciate their minimal ingredients and concern for those with special diets!

  22. I’m not the most tech savvy. I can’t figure out to leave a URL of my Facebook account showing I liked simple mills or of the Pinterest post from my phone? But I did pin it and follow simple mills on Facebook. Thanks for giveaway opportunity.

    • When you are logged into your FB account, just copy the URL at the top of your computer and paste it in. Hope that helps :). or do it from your computer later? you can edit your entries. thanks!

  23. I like that they went to the Wise Traditions conference.

  24. I’m impressed by the quality of ingredients they use and that they are providing an option of mixes for those of us who are grain-free.

  25. Karen Wood says:

GMO free, gluten free, natural and yummy. I like to bake from scratch but it would be nice to have some good mixes handy too.

  26. These mixes sound so good and trying any of them would be great. Thanks

  27. Love these mixes! I love coconut sugar, too. I work at a health food store and am gluten-intolerant and notice that most of the mixes on our shelves are full of starch and white rice. I want something more wholesome and these look spot on! I have been trying to cut back on my grains, too.
I love Simple Mill’s website and their focus on simple low glycemic ingredients! I also like how they list multiple allergies that they avoid in their mixes, including small somewhat unknown ones like yeast and corn.

    • Thank you for taking a look! We take a lot of pride in our ingredients and really wanted to make these friendly for many diets. I have gluten and dairy allergies, while my mom has allergies to all grains, eggs, and yeast. We also wanted to make them with low-glycemic ingredients that were nutrient rich. Even down to the salt we chose (Celtic Sea Salt), every ingredient contributes vital nutrients and minerals!

  28. I SO want to try these! My 2 year old is on a gluten free diet (though the rest of the fam does still eat some) and it’s been difficult finding a variety of things for her to eat!

  29. I have not used a “mix” for years. It would be nice to just grab something instead of the intense from scratch scenario that we are use to!

  30. I looked at the ingredients and am impressed how few are listed and the quality of those ingredients.

  31. I love the fact that there is no rice flour or refined sweeteners and no additives!!! I have been looking for something like this to have on hand when I don’t have the time to make something from scratch! Thank you for introducing me to this company!

  32. Trying to go GF/SF…Glad to try new products!

  33. Joanne Peterson says:

We would try them all. My husband can’t have caffeine. But caffeine does not bother the rest of us. To be able to use a healthy mix again… We like all of the flavors listed. My husband is a cookie fiend. Thanks for sharing the info with us. Joanne

  34. I love that they have a low Glycemic Index!!! I have never found a pre-made product like that! Being diabetic, this is uber important to me, since I can’t partake in what I make my husband (It also doesnt hurt that they are non-GMO)

  35. I’m pretty impressed with the simplicity of the ingredients Simple Mills uses. No long-names we can’t pronounce, and non-GMO too! Great giveaway!

  36. They say simple is best and I like it that they don’t use a lot of starches like other gluten free mixes do. I would like to win this and try their products myself.

  38. These sound amazing!

  39. Vegan, gluten-free, non-Gmo, no refined sugars, grain-free….What more is there to say? Wow!

  40. I like how their latest news is about the Wise Traditions Conference and they took the time and energy to research allergy issues and took into account cross re-activity when creating their product. Cross-re-activity is the hardest aspect of allergies to make people understand and accept.

  41. I’m so impressed with the ingredients – that’s amazing to find in a box mix!

  42. I like that they aware of people who are sensitive to eggs and offer alternatives for that.

  43. Wow! They have great ingredients. So Mindful of what we should really be eating…

  44. I totally do not have it all together. I would love to have these on hand.

  45. So excited about these, no gluten, no sugar!! :D

  46. Real food ingredients!

  47. Lillace Christianson says:

    Chocolate muffins sound great!

  48. I like that they are grain free and low glycemic!

  49. I was SO excited with this review until I saw the ingredient list. We can’t have almond flour :) or any nuts/nut products… I think this has been the most difficult part of going GF, everything is made with almond flour or has nuts in it. At least it gives me hope that there are some things being produced with our specialty diets in mind. Oh well, next time :)

  50. Love the photo! :D I should check out these mixes. Still not sure if we can have almonds or not, but they look pretty awesome. Are they easily egg free?

  51. “Even down to the salt we use (Celtic Sea Salt), we make sure everything we include in the mixes is full of nutrition. “

  52. wow, i would love to try these mixes…they sound amazing!

    • missed the part about what i liked about them…their ingredients and their reasoning behind the ingredients. gluten-free doesn’t necessarily mean it’s healthy but they are actually bringing you healthy gluten-free–in a mix–that’s awesome!

  53. I like that there are explanations, that the company is (currently) small, and the focus on making yummy food more easy for folks.

  54. Thee look really yummy. I like that they are using Coconut Nectar, I use that on occasion and love it.

  55. Cindy Freeman says:

    They have grain free products!

  56. I can’t wait to try these. I ordered the variety pack. I’m so impressed with the ingredients.

  57. Healthy ingredients and simple.

  58. I love that they are non-GMO! So many gluten/grain/junk free foods still contain GMOs.

  59. Kudos to these ladies for offering these wonderful mixes…

  60. Thank you for introducing me to this company. We have a gluten free child and a husband who is avoiding most main-stream carbs. Makes it a little challenging sometimes!

    • Also forgot to mention what I am impressed about: the baked goods are grain free and even *look* delicious! Some grain free baked goods look like doorstops!

  61. I love that they offer grain free, affordable products that are of high quality! I’m looking forward to trying them!

  62. I love that their mixes are low glycemic! That means that not only can I feed my family the gluten free food they need, but I can eat the same thing and still follow my diet plan!

  63. Darlene R. says:

love that the ingredients are real!

  64. They are gf without the need to add a ton of sugar to get them to taste good

  65. Lydia Hill says:

I’ve never tried Simple Mills, but they sound great! I’d love to try their products!

  66. Brooke Sopher says:

I am so impressed by the quality of the ingredients used.

  67. The list at the bottom of the How We’re Different page is interesting. Some of those foods are ones I thought didn’t cause allergy problems for most people.

  68. Almond flour anything! We are in love with this ingredient!

  69. The thing I like about Simple Mills is the non-GMO.

  70. Stephanie W. says:

What impresses me is basically everything that you already mentioned about their company. When people have compromised digestive/health issues, finding products like this are very difficult. Sure, these types of baked goods can be made at home, but it’s nice to have that convenience once in a while.

  71. I like that Simple Mills never uses high glycemic index flours. I believe that this is an important component of a healthy real food diet.

  72. These really look great! I honestly don’t have time to make healthy cookies or baked good treats for my family with everything I have to take care of. But this would make it a quicker, less-daunting process!

  73. I love that the mixes are gluten free!

  74. I’m impressed that they do not use genetically modified ingredients.

The whole and organic ingredients are great! Love how they are lower glycemic too

  76. Hey, sweet friend! I am with you! This is the only packaged mix I’ve found that actually is real food based. Thanks for the shout-out on my cookie recipe using the mixes. I hope your readers enjoy them. And how fun your having a giveaway! I’ll be sure to share about it. Wishing you a very Merry Christmas! Love and blessings, Kelly

  77. I liked their logic about the use of almond flour; almond flour has zero carbohydrates and a neutral blood sugar impact.

  78. The main ingredient isn’t rice!

  79. The ingredients! I never use pre-made mixes because they have so much junk in it, but this one seems something I can actually use. :)

  80. I love that they are gluten free and have little sugar plus their products are GMO free

  81. I love, love, love that it’s a gluten free company which DOES NOT deal with corn or any derivatives….LOVE!
    Hope I win!

  82. I love the taste of whole foods but I haven’t been very successful as getting my husband on board. Maybe this would help.

  83. I have been obsessed with pumpkin lately. I made your delicious soft pumpkin cookies, pumpkin cheesecake, and pumpkin pancakes. I would love to try the pumpkin flavor and make some muffins or cookies! Yum.

  84. I like that they are gluten free, but haven’t just used junk to replace the other junk — WAY too much of that out there!

  85. So great that these are not loaded with sugar. They use ingredients I would use. What a timesaver!

  86. I am impressed by the quality of the mixes and that they’re at an affordable price

  87. How exciting to have grain free, refined sugar free mixes available! Would love to make some loaves with them. Thanks for doing this giveaway!

  88. I like that they use simple ingredients and no GMOs

  89. So excited to try something easy to use, but healthy too! Kudos to Simple Mills!

  90. I forgot to add that I’m impressed they use almond flour! They seem to know they’re way around what’s healthy!

  107. I love that they don’t use flours with a high glycemic index! Never heard of a company doing that. Very cool!

  108. I love that the products are grain free. We have cut everything that contains grain from our family’s diet and it has been hard having to make everything from scratch. My ids are still wanting the things they used to eat and not having anything to fall back on is really hard when I currently go to school to get my master’s degree, have a 1 yr old, 9 yr old, and 5 yr old, work 30 hours a week outside the home, and have church obligations!!!! I can’t always have items “on hand” and this would be great to try! Not sure I could continue to purchase due to prices, but I would be nice to now there is something we COULD purchase!

  109. Michelle Smith says:

I love that simple mills is grain free and dairy free, and especially gmo free.

  110. So many gluten free foods rely on that one aspect as their selling point, and have other unhealthy ingredients. I love that Simple Mills uses not only gluten free, but low-glycemic index, non inflammatory, and non GMO ingredients!

  111. I like that their mixes are soy-free.

  112. I can’t wait to try Banana! Don’t eat them because of their high glycemic factor. But I miss that great flavor!

  113. The chocolate cookies look great!

  114. Diana Cote says:

  122. I love the convenience of the mixes. I’ve been nervous about going grain free and this could make the transition a lot easier. Thanks for the giveaway

  123. Adrienne Guarro says:

    i would make chocolate muffins

  124. Adrienne Guarro says:

    Chocolate muffins are my favorite!

  125. I like all of the pre-packaged mixes. I love baked goods but with all of the gluten and GMO’s out there, it is difficult to find good food.

  126. This is the healthiest ingredient list for a muffin mix that I’ve ever seen. And they look delicious! Thanks for the giveaway. :)

  127. I’d make all three for my hungry brothers (one of whom is now completely GF!).

  128. Fran Vaudreuil says:

  129. chocolate—definitely chocolate!

  130. Great to hear about this product! Had not heard of it before.

  132. I love that the ingredients are actually good for you and NON GMO!! And, who doesn’t love an easy MIX to use when you just don’t have the time to bake from scratch?!

I’m impressed that there is a focus on whole food and that the mixes are paleo-friendly.

  136. Amy Tuccitto says:

I love the simple, back to basics/ healthy recipes.

  137. I have been developing a similar product line for months. Found my niche, but evidently Simple Mills beat me to the national retail market.

    • Good for you! Looks like you have different things as well, though, right? I’m sure there’s room for more.

      • That is true! Definitely room in the market for more of us, and overall I have found folks in the GF community to be very supportive of one another. Didn’t mean to sound negative. Just hit me in an “odd” way and reminding me I need to get more focused.
I’m very happy for them! I love the look of their product, their website, etc. Can’t wait to try them!

        • It’s hard to do everything. I know. I could do a whole lot more w/ my blog but I can’t do everything. Even as it is I am too busy. Take care :). You are making other mixes, right? I couldn’t make it out on your site.

  138. I’m so impressed at the simplicity of ingredients and the fact that they are low-glycemic!!

  139. Chocolate, of course!!

  140. Emily filmore says:

Since going gluten free we have been trying to find a product like this! Yay!

  141. Looking forward to trying this!

  142. Would love to try these products.

  143. I love the clear and simple approach they outline. As a gluten free family, it can be tempting to grab one of the many GF snacks when at the store…but the ingredients! So many are plain horrible. The simple, but healthy approach to making everyday cooking is greatly appealing. Thanks for sharing — I look forward to giving Simple Mills a try.

  144. What type of egg replacer did you use when baking?

  145. Nakia Kelley says:

I just ordered…these look amazing! Can’t wait to try!
